Al Harees is a traditional Emirati dish made of wheat and meat, slow-cooked to a smooth, hearty consistency. It’s a celebratory dish, often served during Ramadan, Eid, and weddings. Here’s how you can make it at home.


Ingredients

  • 2 cups whole wheat (harees or pearled wheat)
  • 500g boneless lamb or chicken (cut into medium pieces)
  • 6 cups water
  • 1 tsp salt (adjust to taste)
  • 1 tsp ground cinnamon (optional, for garnish)
  • 2 tbsp ghee (for serving)

Instructions

  1. Prepare the Wheat
    • Rinse the wheat thoroughly under cold water.
    • Soak it in water for at least 4-6 hours, or overnight, for best results.
  2. Cook the Meat and Wheat
    • In a large, heavy-bottomed pot or pressure cooker, combine the soaked wheat, meat, and water.
    • Add salt to taste.
  3. Simmer the Mixture
    • If using a regular pot: Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 3-4 hours, stirring occasionally to prevent sticking.
    • If using a pressure cooker: Cook on high for 45 minutes to 1 hour, then release the pressure naturally.
  4. Blend the Ingredients
    • Once the wheat and meat are fully cooked and tender, use a wooden spoon or hand blender to mash and mix the ingredients. The goal is to achieve a smooth, porridge-like consistency.
    • If the mixture is too thick, add a little hot water and continue stirring.
  5. Serve
    • Transfer the harees to a serving dish.
    • Drizzle with melted ghee on top for added flavor.
    • Sprinkle with ground cinnamon, if desired, as a garnish.

  • Meat Substitutes: You can replace lamb with beef or chicken based on your preference.
  • Traditional Cooking Method: Traditionally, Al Harees is cooked in clay pots and simmered overnight in a stone oven for enhanced flavor.
