Al Harees Recipe
Al Harees is a traditional Emirati dish made of wheat and meat, slow-cooked to a smooth, hearty consistency. It’s a celebratory dish, often served during Ramadan, Eid, and weddings. Here’s how you can make it at home.
Ingredients
- 2 cups whole wheat (harees or pearled wheat)
- 500g boneless lamb or chicken (cut into medium pieces)
- 6 cups water
- 1 tsp salt (adjust to taste)

- 2 tbsp ghee (for serving)
Instructions
- Prepare the Wheat
- Rinse the wheat thoroughly under cold water.
- Soak it in water for at least 4-6 hours, or overnight, for best results.
- Cook the Meat and Wheat
- In a large, heavy-bottomed pot or pressure cooker, combine the soaked wheat, meat, and water.
- Add salt to taste.
- Simmer the Mixture
- If using a regular pot: Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 3-4 hours, stirring occasionally to prevent sticking.
- If using a pressure cooker: Cook on high for 45 minutes to 1 hour, then release the pressure naturally.
- Blend the Ingredients
- Once the wheat and meat are fully cooked and tender, use a wooden spoon or hand blender to mash and mix the ingredients. The goal is to achieve a smooth, porridge-like consistency.
- If the mixture is too thick, add a little hot water and continue stirring.
- Serve
- Transfer the harees to a serving dish.
- Drizzle with melted ghee on top for added flavor.
- Sprinkle with ground cinnamon, if desired, as a garnish.
