ANZAC Biscuits Recipe
ANZAC biscuits are a classic Australian and New Zealand treat, traditionally made to honor the soldiers of the Australian and New Zealand Army Corps (ANZAC). Here’s how to make them:
Ingredients:
- Dry Ingredients:
- 1 cup rolled oats
- 1 cup plain flour
- 1 cup desiccated coconut
- 3/4 cup brown sugar
- Wet Ingredients:
- 125g (1/2 cup) unsalted butter
- 2 tablespoons golden syrup (or honey as a substitute)
- 1/2 teaspoon bicarbonate of soda
- 2 tablespoons boiling water
Instructions:
- Preheat the Oven
- Preheat your oven to 160°C (320°F) and line two baking trays with parchment paper.
- Combine Dry Ingredients
- In a large mixing bowl, combine the rolled oats, plain flour, desiccated coconut, and brown sugar.
- Prepare Wet Mixture
- In a small saucepan over low heat, melt the butter with the golden syrup, stirring until smooth.
- Dissolve the bicarbonate of soda in the boiling water in a small bowl. Add this to the melted butter mixture. The mixture will foam up—this is normal.
- Mix Wet and Dry Ingredients
- Pour the foamy butter mixture into the bowl of dry ingredients. Mix thoroughly until the dough is evenly combined.
- Shape the Biscuits
- Roll tablespoon-sized portions of the mixture into balls and place them on the prepared baking trays. Leave about 5 cm (2 inches) between each ball to allow for spreading. Flatten slightly with your fingers or the back of a spoon.
- Bake
- Bake for 10–15 minutes, or until golden brown. The biscuits will be soft when they come out of the oven but will harden as they cool.
- Cool and Serve
- Let the biscuits cool on the trays for 5 minutes, then transfer them to a wire rack to cool completely.
Storage:
- Store in an airtight container for up to two weeks.
Tips:
- For a chewier biscuit, bake for a slightly shorter time.
- For a crunchier biscuit, bake until golden and firm.
Enjoy these traditional biscuits with tea or as a snack anytime!
