ANZAC Biscuits Recipe

ANZAC biscuits are a classic Australian and New Zealand treat, traditionally made to honor the soldiers of the Australian and New Zealand Army Corps (ANZAC). Here’s how to make them:


Ingredients:

  • Dry Ingredients:
    • 1 cup rolled oats
    • 1 cup plain flour
    • 1 cup desiccated coconut
    • 3/4 cup brown sugar
  • Wet Ingredients:
    • 125g (1/2 cup) unsalted butter
    • 2 tablespoons golden syrup (or honey as a substitute)
    • 1/2 teaspoon bicarbonate of soda
    • 2 tablespoons boiling water

Instructions:

  1. Preheat the Oven
    • Preheat your oven to 160°C (320°F) and line two baking trays with parchment paper.
  2. Combine Dry Ingredients
    • In a large mixing bowl, combine the rolled oats, plain flour, desiccated coconut, and brown sugar.
  3. Prepare Wet Mixture
    • In a small saucepan over low heat, melt the butter with the golden syrup, stirring until smooth.
    • Dissolve the bicarbonate of soda in the boiling water in a small bowl. Add this to the melted butter mixture. The mixture will foam up—this is normal.
  4. Mix Wet and Dry Ingredients
    • Pour the foamy butter mixture into the bowl of dry ingredients. Mix thoroughly until the dough is evenly combined.
  5. Shape the Biscuits
    • Roll tablespoon-sized portions of the mixture into balls and place them on the prepared baking trays. Leave about 5 cm (2 inches) between each ball to allow for spreading. Flatten slightly with your fingers or the back of a spoon.
  6. Bake
    • Bake for 10–15 minutes, or until golden brown. The biscuits will be soft when they come out of the oven but will harden as they cool.
  7. Cool and Serve
    • Let the biscuits cool on the trays for 5 minutes, then transfer them to a wire rack to cool completely.

Storage:

  • Store in an airtight container for up to two weeks.

Tips:

  • For a chewier biscuit, bake for a slightly shorter time.
  • For a crunchier biscuit, bake until golden and firm.
