Balaleet is a traditional Emirati breakfast dish that combines sweet and savory flavors. It features sweetened vermicelli noodles topped with an aromatic spiced omelet. This dish is a favorite for special occasions and is quick to prepare with simple ingredients.


Ingredients

For the Vermicelli:

  • 200g vermicelli noodles
  • 2 tbsp ghee or butter
  • 1/4 cup sugar (adjust to taste)
  • 1/2 tsp ground cardamom
  • 1/4 tsp ground saffron (soaked in 1 tbsp warm water)
  • 1/4 tsp ground cinnamon
  • 1/4 cup rose water (optional, for a fragrant touch)
  • 1/2 tsp salt

For the Omelet:

  • 2 large eggs
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp ghee or oil

For Garnish (Optional):

  • Chopped pistachios or almonds
  • Raisins

Instructions

1. Prepare the Vermicelli:

  • Break the vermicelli into smaller pieces for easier cooking.
  • In a large pan, heat the ghee or butter over medium heat. Add the vermicelli and stir continuously until it turns golden brown.
  • Add enough water to cover the vermicelli and a pinch of salt. Bring to a boil and cook until the noodles are tender (about 3-5 minutes). Drain and set aside.

2. Sweeten and Flavor the Vermicelli:

  • Return the cooked vermicelli to the pan. Stir in the sugar, ground cardamom, saffron water, cinnamon, and rose water. Mix well and cook on low heat for 2-3 minutes until the flavors are absorbed.

3. Make the Omelet:

  • In a bowl, whisk the eggs with salt and pepper.
  • Heat ghee or oil in a non-stick pan over medium heat. Pour in the egg mixture and cook until the omelet is set, flipping once if desired.

4. Assemble the Balaleet:

  • Place the sweetened vermicelli on a serving platter.
  • Top with the omelet, either whole or cut into strips.

5. Garnish and Serve:

  • Garnish with chopped pistachios, almonds, or raisins for extra texture and flavor. Serve warm.

  • For a richer flavor: Use more ghee and adjust the sugar to your sweetness preference.
