Breakfast burritos are a versatile, hearty, and satisfying way to start your day. Packed with fluffy eggs, melty cheese, crispy potatoes, and optional savory meat, this dish is a crowd-pleaser!


Ingredients (Serves 2)

For the Filling:

  • 4 large eggs
  • 1/4 cup milk (optional, for fluffier eggs)
  • 1/2 cup shredded cheese (cheddar, Monterey Jack, or a mix)
  • 1 cup diced potatoes (or frozen hash browns)
  • 1/4 cup cooked meat (bacon, sausage, or chorizo)
  • 2 large flour tortillas (burrito-sized)
  • 1 tablespoon butter or oil (for cooking)
  • Salt and pepper to taste

Optional Toppings:

  • Salsa or hot sauce
  • Diced avocado or guacamole
  • Sour cream
  • Fresh cilantro

Instructions

1. Cook the Potatoes:

  1. Heat 1 tablespoon of oil in a skillet over medium heat.
  2. Add the diced potatoes or frozen hash browns and cook until golden and crispy, about 8–10 minutes. Season with salt and pepper. Set aside.

2. Prepare the Meat (if using):

  1. Cook bacon, sausage, or chorizo in the same skillet until browned and fully cooked. Remove and set aside.

3. Scramble the Eggs:

  1. Crack the eggs into a bowl, add milk if desired, and whisk until well combined.
  2. Melt 1 tablespoon of butter in the skillet over low to medium heat.
  3. Pour in the eggs and cook, stirring gently, until soft and fluffy. Season with salt and pepper.

4. Warm the Tortillas:

  1. Heat each tortilla in a dry skillet over medium heat for about 30 seconds per side or until pliable. Alternatively, microwave for 15–20 seconds.

5. Assemble the Burritos:

  1. Lay each tortilla flat and layer the fillings in the center:
    • Crispy potatoes
    • Scrambled eggs
    • Cooked meat (if using)
    • Shredded cheese
    • Any additional toppings like salsa, avocado, or sour cream
  2. Fold the sides of the tortilla inward, then roll it tightly from the bottom to create a burrito.

6. Serve and Enjoy:
Serve your breakfast burritos warm, with extra salsa or hot sauce on the side for dipping.
