
Falafel Recipe: A Crispy, Flavorful Middle Eastern Delight

Instructions:
1. Prepare the Chickpeas:
- Rinse the soaked chickpeas thoroughly and drain well.
2. Blend the Falafel Mixture:
- In a food processor, combine the chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, cardamom, cayenne pepper, baking powder, flour, salt, and pepper.
- Pulse until the mixture is finely ground but not a paste. The mixture should hold together when pressed.
3. Chill the Mixture:
- Transfer the mixture to a bowl, cover, and refrigerate for 1–2 hours to make it easier to shape.
4. Shape the Falafel:
- Using your hands or a falafel scoop, shape the mixture into small balls or patties, about 1–2 inches in diameter.
5. Fry the Falafel:
- Heat oil in a deep skillet or pot to about 350°F (175°C).
- Fry the falafel in batches, turning occasionally, until golden brown and crispy (about 3–5 minutes).
- Remove with a slotted spoon and drain on paper towels.
6. Serve:
- Serve the falafel in pita bread or flatbread with tahini sauce, fresh vegetables, and hummus.
- Alternatively, serve as part of a mezze platter with dips and salads.
Tips:
- Baking Option: For a healthier version, brush falafel patties with oil and bake at 400°F (200°C) for 20–25 minutes, flipping halfway through.
- Freezing Tip: Falafel can be frozen before frying. Simply shape the mixture, freeze on a baking sheet, then store in a freezer bag. Fry directly from frozen.
- Texture Tip: Avoid using canned chickpeas, as they result in a mushy texture.
