Ingredients

For the Marinade:

  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 3 garlic cloves, minced

  • 1 teaspoon dried thyme (or 1 tablespoon fresh)
  • 1 teaspoon paprika

For the Skewers:

  • 1 ½ pounds boneless, skinless chicken breast or thighs, cut into 1-inch cubes
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • Wooden or metal skewers

 

Instructions

1.Prepare the Marinade:
In a medium bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, thyme, paprika, salt, pepper, and parsley.

2. Marinate the Chicken:
Add the chicken cubes to the marinade, ensuring they are well-coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor.

3.Soak the Skewers (if using wooden):
While the chicken marinates, soak wooden skewers in water for 20–30 minutes to prevent them from burning on the grill.

4.Assemble the Skewers:
Thread the marinated chicken onto the skewers, alternating with pieces of bell peppers and onion.

5.Preheat the Grill:
Preheat your grill to medium-high heat (about 375–400°F). Lightly oil the grill grates to prevent sticking.

6.Grill the Skewers:
Place the skewers on the grill and cook for 10–15 minutes, turning occasionally, until the chicken is cooked through and has a light char. The internal temperature of the chicken should reach 165°F.

7.Serve:
Remove the skewers from the grill and let them rest for 2–3 minutes. Serve hot with a side of rice, salad, or pita bread and tzatziki sauce.

  • For a smoky flavor, add a sprinkle of smoked paprika to the marinade.
