Ingredients

For the Dough:

  • 2 cups all-purpose flour
  • 2 tbsp cornstarch
  • 1 tbsp sugar

  • 1/2 tsp ground cardamom

  • Date syrup (dibs) or honey

Instructions

1. Prepare the Dough:

  • In a large bowl, mix the flour, cornstarch, sugar, yeast, salt, cardamom, and saffron.
  • Gradually add warm water while mixing until a smooth, thick batter forms. It should have a sticky, pourable consistency.
  • Cover the bowl with a damp cloth and let the batter rest in a warm place for 1-2 hours, or until it doubles in size.

2. Heat the Oil:

  • In a deep pan, heat enough oil for deep frying over medium heat. The oil should be hot but not smoking (around 350°F or 175°C).

3. Shape and Fry the Luqaimat:

  • Using a wet spoon or your hands, scoop small portions of the batter and drop them into the hot oil. Alternatively, use a piping bag or a spoon to create small, round shapes.
  • Fry the dumplings in batches, turning them frequently, until they are golden brown and crisp on all sides (about 3-4 minutes).
  • Remove with a slotted spoon and drain on paper towels.

4. Serve:

  • Arrange the luqaimat on a serving plate. Drizzle generously with date syrup or honey.
  • Sprinkle with sesame seeds, if desired.

Tips and Variations

  • Traditional Flavors: For an authentic touch, soak the saffron in a tablespoon of warm water and add it to the batter.
  • Texture Check: The batter should be thick enough to hold shape but soft enough to drop easily into the oil. Adjust water or flour as needed.
  • Serving: Luqaimat are best enjoyed warm for their crispy exterior and soft interior.
