Machboos Recipe

Machboos, also known as Kabsa in some regions, is a flavorful and aromatic rice dish popular in Gulf countries, especially the UAE. It combines tender meat, spiced rice, and a blend of fragrant spices. Here’s how to prepare this traditional dish.


Ingredients

For the Meat or Chicken:

  • 1 kg lamb, chicken, or fish (cut into large pieces)
  • 6 cups water
  • 1 large onion (quartered)
  • 2-3 cloves garlic (whole)
  • 2 bay leaves
  • 3 whole cardamom pods
  • 1 cinnamon stick
  • 1 tsp black peppercorns
  • 1 tsp salt

For the Rice:

  • 2 cups basmati rice (soaked for 30 minutes and drained)
  • 2 tbsp vegetable oil or ghee
  • 1 large onion (thinly sliced)
  • 2 medium tomatoes (chopped)
  • 2-3 cloves garlic (minced)
  • 1 tbsp tomato paste
  • 1 tsp turmeric powder
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp baharat (Arabic spice mix)
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cardamom
  • 1/4 tsp ground cloves
  • 1 dried lime (loomi)
  • 1/4 cup raisins (optional)
  • 1/4 cup chopped fresh coriander (for garnish)

Instructions

1. Prepare the Stock:

  • Place the meat or chicken in a large pot with water. Add the quartered onion, garlic, bay leaves, cardamom pods, cinnamon stick, peppercorns, and salt.
  • Bring to a boil, then reduce the heat and simmer for 1-1.5 hours (or until the meat is tender). For chicken, simmer for 40-50 minutes.
  • Skim off any impurities or foam that rise to the surface.
  • Once cooked, remove the meat and strain the stock. Reserve the stock for cooking the rice.

2. Cook the Rice:

  • Heat the oil or ghee in a large pot. Sauté the sliced onions until golden brown.
  • Add the minced garlic, chopped tomatoes, and tomato paste. Cook until the mixture forms a thick sauce.
  • Stir in the turmeric, coriander, cumin, baharat, cinnamon, cardamom, and cloves. Mix well.
  • Add the soaked rice to the pot and stir to coat it with the spices.
  • Pour in 3.5 cups of the reserved stock. Add the dried lime and raisins (if using). Bring to a boil, then reduce the heat to low. Cover and cook for 15-20 minutes, or until the rice is fully cooked and fluffy.

3. Combine the Meat and Rice:

  • Gently mix the cooked meat or chicken into the rice. Let it sit on low heat for 5-10 minutes for the flavors to meld.

4. Serve:

  • Transfer the Machboos to a large serving platter.
  • Garnish with fresh coriander and serve with a side of yogurt or a simple salad.

Tips and Variations

  • Vegetarian Option: Substitute meat with vegetables like carrots, zucchini, and eggplant.
  • Spicier Version: Add green chilies or extra baharat for a spicier kick.
  • Traditional Serving: Machboos is often served family-style on a large platter for communal eating.
