Shawarma Recipe: A Middle Eastern Classic

Shawarma is a beloved Middle Eastern street food made of marinated meat, slow-cooked to tender perfection, and served in wraps or on plates with fresh accompaniments. Here’s a simple way to recreate this dish at home.


Ingredients:

For the Meat:

  • 500g chicken, beef, or lamb (thinly sliced)
  • 3 tablespoons plain yogurt
  • 3 tablespoons olive oil
  • 2 tablespoons white vinegar or lemon juice
  • 1 tablespoon shawarma spice mix (or see spice blend below)
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 2 cloves garlic, minced
  • Salt and pepper, to taste

For the Wraps and Toppings:

  • 4-6 pita bread or flatbreads
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup sliced pickles (optional)
  • 1/2 cup thinly sliced red onions (optional)
  • 1/2 cup tahini sauce, garlic sauce, or hummus

Instructions:

1. Marinate the Meat:

  • In a large bowl, combine yogurt, olive oil, vinegar, spices, and garlic.
  • Add the sliced meat and mix to coat evenly. Cover and marinate for at least 2 hours, preferably overnight in the fridge.

2. Cook the Meat:

  • Heat a large skillet or grill pan over medium-high heat. Add a bit of oil.
  • Cook the marinated meat in batches, ensuring it’s evenly browned and cooked through (about 6–8 minutes per batch).
  • Alternatively, thread the meat onto skewers and grill over medium heat until cooked.

3. Assemble the Shawarma Wraps:

  • Warm the pita bread or flatbreads.
  • Spread a layer of tahini sauce, garlic sauce, or hummus on the bread.
  • Add the cooked meat, shredded lettuce, diced tomatoes, pickles, and onions.

4. Roll and Serve:

  • Roll the bread tightly into a wrap, securing with parchment paper or foil if needed.
  • Serve immediately with extra sauce on the side.

Tips:

  • Spice Blend Shortcut: Pre-mixed shawarma spices are available at most Middle Eastern grocery stores.
  • Vegan Option: Replace meat with marinated and roasted vegetables or grilled tofu.
  • Serving Variation: Serve shawarma over rice with a side of grilled vegetables for a plated option.
