Tabbouleh Recipe: A Fresh Mediterranean Salad

Ingredients

  • For the Salad:
    • 1 cup bulgur wheat (fine or medium grind)
    • 1 cup boiling water
    • 2 cups finely chopped flat-leaf parsley (about 2 bunches)
    • 1/2 cup finely chopped fresh mint leaves
    • 4 medium tomatoes, diced
    • 4 green onions, thinly sliced
    • 1 small cucumber, finely diced (optional)
  • For the Dressing:
    • 1/4 cup fresh lemon juice (about 2 lemons)
    • 1/4 cup extra virgin olive oil
    • Salt and freshly ground black pepper, to taste

Instructions

  1. Prepare the Bulgur Wheat:
    • Place the bulgur in a heatproof bowl. Pour the boiling water over it, cover the bowl with a plate or plastic wrap, and let it sit for 15-20 minutes, or until the bulgur is tender and the water is absorbed.
    • Fluff the bulgur with a fork, then let it cool completely.
  2. Chop the Herbs and Vegetables:
    • Finely chop the parsley and mint. Aim for a very fine consistency to enhance the texture of the salad.
    • Dice the tomatoes and cucumber into small, uniform pieces. Slice the green onions thinly.
  3. Make the Dressing:
    • In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Adjust the seasoning to taste.
  4. Combine the Ingredients:
    • In a large mixing bowl, combine the cooled bulgur, parsley, mint, tomatoes, green onions, and cucumber (if using).
    • Pour the dressing over the salad and toss gently to coat all the ingredients evenly.
  5. Let it Rest:
    • For the best flavor, cover and refrigerate the tabbouleh for 15-30 minutes before serving, allowing the flavors to meld together.
  6. Serve and Enjoy:
    • Serve the tabbouleh chilled or at room temperature as a side dish, appetizer, or light main course. Pair it with pita bread, hummus, or grilled meats for a complete Mediterranean meal.

Tips:

  • For an authentic flavor, use a high ratio of herbs to bulgur wheat, making the salad herb-heavy.
  • Ensure your parsley and mint are thoroughly dried after washing to avoid a soggy salad.
  • Customize the salad by adding pomegranate seeds, diced bell peppers, or a pinch of ground cinnamon for a unique twist.
