Thareed (Traditional Middle Eastern Bread and Meat Stew)
Thareed, also known as Fareed, is a beloved traditional dish in the Middle East, particularly popular in Gulf countries like Qatar, the UAE, and Saudi Arabia. This hearty dish combines tender meat, flavorful vegetables, and bread soaked in a deliciously spiced broth. Here’s how to prepare it:
Ingredients
For the Meat and Broth:
- 1 kg lamb or chicken (bone-in pieces work best)
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 3 garlic cloves, minced
- 2 medium tomatoes, chopped
- 2 tablespoons tomato paste
- 1 teaspoon turmeric powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon paprika
- 2 cardamom pods
- 1 bay leaf
- 1 stick cinnamon
- 6 cups water (or enough to cover the meat)
- Salt to taste
For the Vegetables:
- 2 medium carrots, chopped
- 2 medium zucchinis, sliced
- 2 medium potatoes, cubed
- 1 cup pumpkin, cubed (optional)
- 1/2 cup cooked chickpeas (optional)
For the Bread:
- 4-6 pieces of flatbread (like regag, pita, or Arabic khubz)
Garnish (Optional):
- Fresh cilantro, chopped
- Lemon wedges
Instructions
Step 1: Prepare the Meat
- Heat vegetable oil in a large pot over medium heat.
- Add the chopped onion and sauté until golden brown.
- Stir in the garlic and cook for another minute.
- Add the meat and cook until browned on all sides.
Step 2: Make the Broth
- Add the chopped tomatoes, tomato paste, turmeric, cumin, coriander, cinnamon, black pepper, and paprika. Stir well.
- Drop in the cardamom pods, bay leaf, and cinnamon stick.
- Pour in the water, ensuring the meat is fully submerged.
- Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 1–1.5 hours, or until the meat is tender. Skim off any foam that rises to the surface.
Step 3: Add Vegetables
- Once the meat is tender, add the carrots, potatoes, zucchini, and pumpkin (if using).
- Continue to simmer until the vegetables are cooked through, about 20–30 minutes.
- Stir in the cooked chickpeas (if using) and adjust the seasoning with salt as needed.
Step 4: Assemble the Thareed
- Tear the flatbread into large pieces and place them at the bottom of a wide, deep serving dish.
- Ladle the meat, vegetables, and broth over the bread. Allow the bread to soak up the flavorful broth for a few minutes before serving.
Step 5: Garnish and Serve
- Garnish with fresh cilantro and serve with lemon wedges on the side for an added tangy kick.
Tips:
- For extra flavor: Add a few dried limes (loomi) to the broth while simmering.
- Vegetarian version: Substitute meat with lentils or beans and use vegetable stock instead.
- Bread options: Thin, crispy regag bread is traditional, but any flatbread will work.
Enjoy your Thareed, a comforting and timeless dish that brings family and friends together!
